Hallowen



The Pumpkin soup

Ingredient.
Pumpkin
Red onion
sun dried tomato puree
red pepper
double cream  or Thick cream.



prepare.
halving a pumpkin ,remove the pulp and chop up the flesh.(scoop out the seeds and set aside)


METHOD

1.Heat one tablespoon olive oil  in  a pan and fry some peeled and chopped red onion and garlic for 5 minutes.
2.Add sun dried,tomato puree and sliced of peppers, and the pumpkin. Cook for 12 minutes,then add 1 littre vegetable stock and bring to the boil.
3.Reduces the heat and cook for 30 minutes..
4.Blend in a food processor until smooth,then return to the pan to warm through.
5.serve  in bowls and make a spiderweb pattern with cream: Drizzle on two concendric circles plus a dot in the centre,then drag out with a skewer.
6.Top with baked pumpkin seeds for fun hollowen meal.
