Pork Gyoza
ingredient
chinese gabbge finely choped
bamboo slots finely chopped
mince pork
soy sauce
fish sauce
mirin
chopped shallot
grated ginger
sesame seeds,briefly toasted
roughly chopped coriander
sugar
eggs, lightly beaten
red chilli, finely chopped
salt and white pepper
wrappers.
80 wonton skins
vegetable oil
gyoza sauce
method:
put all ingredieents for the filling in a bowl and mix together.It is best to do this wih your hands.season with salt and pepper.
put the teaspoonful of the mixture in the centre each wonton skin.moist with edges with a little bit water and then fold over to crete a half moon shape.press down the seal.
heat the frying pan until hot and smoking, add 1 tablespoon vegetable oil.reduces the heat over moderate.put dumlings in the pan, and saute gently until starting brown.
remove the pan from heat ,add 3 tablespoonfull water and cover immedietly with lid.Return to the hot heat for 1 minutes,then remove and set aside
serve with gyoza sauce.
